First, let me say, all these different flavors of olive oils and balsamic are so fun to play with in the kitchen. I love tossing cherry tomatoes in a little of the basil olive oil along with a tablespoon of the Zesty Mediterranean Herb blend, then bake in the oven until they begin to crack and burst. I toast up a little bread, rub a little garlic on the bread and then top it with a spoonful of the roasted tomatoes and it is absolutely delicious! The classic fresh basil in the oil helps enhance the tomatoes in the best way.
